How will those that aren't seeded fall into bracket? Random? Winning %?

Brackets are not drawn until after weigh-ins. This is in case a seeded wrestler doesn't make weight or can not wrestle due to something else. Everyone in the bracket that is not seeded gets random draw by the computer. So it all depends on how you fall if are not seeded. If a seeded wrestler doesn't make weight or doesn't participate, then all seeds move up a spot. In that case there will be no #12 seed since that is all that is seeded.

Been a while since I coached but they also protect your wrestler from having a team mate first match. If the computer draws them in that spot they move them ... or at least they used to.
